The day I made this oatmeal shortbread was very blustery! The snow came down all day- it was great! The kids went outside to play as soon as their schoolwork was completed. Fort building and an eventual snowy back rug were what was happening at our house that afternoon!
Everyone was occupied trying to get outside to play, so I decided to warm up the kitchen by baking. Boy, did I bake. One of the things I baked on this blustery day was my mom’s oatmeal shortbread. It’s like getting a little taste of holiday baking early! With the oatmeal giving a crunch to it, it’s the perfect accompaniment to a cup of tea. We’ve got company coming tomorrow night for tea…so I tucked the batch away just for that.
I love making this recipe. Taking only a few minutes to throw the dough together, you’ve got a quick dessert on the table in less than an hour! And believe me, every hour is precious. So, this wonderful recipe for oatmeal shortbread only has one small hitch. You can’t forget to cut it into pieces! Make sure to set your timer for 10 minutes after removing the pan from the oven. Then gently cut it into portions, and leave to cool completely.
This shortbread isn’t the most beautiful dessert to make, but served with a steaming mug of tea or even my London fog, it makes a wonderful treat! Sometimes it’s the least fancy desserts that are the best tasting. Especially when there is a lot of butter involved. 😉

Mom’s Oatmeal Shortbread
Crisp, sweet and buttery, this shortbread has the added crunch of oatmeal!
Servings: 1 9×13
Ingredients
- 1 cup butter – softened
- ¾ cup white sugar
- 1½ cups all purpose flour
- 1½ cups oatmeal
- ¾ tsp salt
Instructions
- Heat oven to 325 degrees F. Grease 9×13 pan.
- Mix all ingredients together.
- Press evenly in the pan. Prick with a fork all over (optional)
- Bake for 30-35 minutes, or until light brown all over.
- Remove from oven, and let cool for 10 minutes.
- Cut into portions or squares with a sharp knife. Let cool completely before serving.
- Enjoy!
