Does anyone else kind of hate beans like me? Don’t get me wrong, I think they’re healthy. They’re cheap. That’s all good. I just haven’t enjoyed them. Until last night… When I had the Best Instant Pot Beans Ever!!

I was planning supper last night. I remembered the bag of dried beans I had in the pantry. Hey! We could have beans and rice for supper! Great idea! Firstly, because it was cheap, and secondly, because I have a great recipe book for the Instant Pot.
Let’s talk about my Instant Pot for a minute, shall we? I love that thing. It’s fast, furious, and cooks everything to perfection. I’ve had mine for a year now, and have used it scores of times. I’ve even given away my precious slow cooker. Yup. Replaced it with the Instant Pot.
This cookbook is called ‘Dinner In An Instant’ by Melissa Clark. There are some really great recipes for the Instant Pot, and I remembered seeing one for beans! Yay! Beans!

If you’ve never used an Instant Pot, I highly recommend you get yourself one. They make cooking times super fast, plus, they are very easy to use. And kind of fun – you get to play with high pressure safely. What more could you want on a Tuesday afternoon?
Do you love garlic? Do you love rosemary? You’ll enjoy these brothy, garlicky beans. Here’s the recipe.
What you’ll need:
- 1 lb of white beans (I used Great Northern)
- 7 cups of water
- 2 TBSP of olive oil
- 4 smashed cloves of garlic
- 2 tsp of salt
- 2 large sprigs of fresh rosemary
- 1 bay leaf
Place all ingredients listed above into your Instant Pot. Make sure the sealing ring is inserted in the lid properly, and place the lid on the pot. Cook on high pressure for 25 minutes. Allow the pressure to release naturally. Remove lid, and spoon the beans onto a bed of hot rice, or just into a bowl to be enjoyed on their own. Really.
Could beans actually be this creamy? The garlic and rosemary flavours came out beautifully!
My mind has been changed concerning beans. I will definitely make them again and again.

- pressure cooker
Ingredients
- 1 lb white beans
- 7 cups water
- 4 cloves garlic smashed
- 2 TBSP olive oil
- 2 tsp salt
- 2 sprigs rosemary fresh
- 1 bay leaf
Instructions
- Add beans, water, garlic, oil, salt, rosemary and bay leaf to the Instant PotClose the lid (read instructions for closing the lid and setting the valve properly)Cook on high pressure for 25 minutes Let the beans release pressure naturallyServe over rice, quinoa or just in a bowl on their own.Enjoy!
