Do you just crave a nice bowl of granola at times? I know I do. Full of crunchy, sweet and nutty bits, this easy granola recipe pairs super well with yogurt. Made with all natural ingredients, it is also as guilt-free as granola can get!
This easy granola recipe is very versatile. This means that you can quickly make it to suit your tastes or even what you have in the cupboard. I’ll explain below.
What you need to make this granola.
- Rolled oats. Either quick or old-fashioned will do. I used old-fashioned because that is what I had on hand.
- Sesame seeds. Feel free to use sunflower seeds or pumpkin seeds also.
- Chopped almonds.
- Chopped walnuts, because, yummm!
- Whole wheat pastry flour. I have used store bought in the past, but now I have a Komo Mio grain mill. I love it! Stay tuned for a post and video on how it works!
- Cinnamon.
- Salt.
- Coconut oil. I used cold-pressed because I just love the smell and taste of coconut!
- Maple syrup. You can also use honey or brown rice syrup. I’ve used both in the past, and they work just as well.
- Pineapple juice, because I had it on hand, but you can go ahead and use apple or orange if that is what you have.
- Vanilla. I prefer the extract and not the flavouring, but I realize it’s more expensive.
- Almond extract.
How to make this easy granola.
- Measure your rolled oats, sesame seeds, chopped almonds, chopped walnuts, whole wheat pastry flour, cinnamon and salt into a large bowl. Turn oven on to 300 degrees F.
- Mix the dry ingredients thoroughly.
- In a heatproof glass bowl, either microwave the coconut oil, or put the coconut oil in a pan on low heat to melt it.
- Once the oil is melted, add the maple syrup, pineapple juice, vanilla and almond extract.
- Stir well.
- Pour the liquid mixture over the dry and stir until it is completely incorporated and there are no dry clumps left.
- Spread the granola out on a large cookie sheet, and place in warm oven.
- Stir every 15 minutes to ensure even baking.
- Take it out after 45 to 60 minutes. When it is evenly browned, you will know the granola is done.
- Let cool on the baking sheet, and place in an airtight container.
- Enjoy with yogurt, fresh or frozen fruit, milk or kefir.
Tips and things to watch out for in making your granola.
- Feel free to substitute seeds or nuts of your choice, as long as it adds up to 2 1/2 cups.
- Use any juice you like or have on hand. Pineapple juice kind of joins itself well with the coconut oil to make a “tropical” flavour.
- Don’t overbake the granola. If you brown the nuts and seeds too much, it will make them taste bitter.
- Don’t skip the whole wheat flour. If you like crunchy granola, the flour binds the ingredients to make clumps of deliciousness.
- If you decide to add dried fruit to the granola mix, be sure to add it in after the granola is baked. That way the fruit stays tender and sweet.

Ingredients
