This pineapple matcha iced latte recipe is absolutely fantastic! You will reach for this recipe over and over again this summer. As the need for something cold and caffeinated comes to you during the hot summer months, this recipe should be within reach at all times.

With only a few ingredients that may already be in your pantry, this special drink is not only easy to make, but delicious! The pineapple matcha iced latte drink is a spin off the one you can buy at Starbuck’s. I’ve ordered it at least three times in the past month or so, and I was determined to recreate the same drink at home – without the cost.
First of all, before we get to the recipe itself, I want to give you a little update on our move. We’ve sold our home, and are living temporarily at some dear friends’ house. They’ve graciously invited us to stay here until our plans get sorted to move to Canada.

Okay, on to how to make this delectable drink! First you really need to find a good matcha latte mix. I used this one. It is delicious! I found it at Whole Foods, but you can also buy it on Amazon. The latte mix is really the only “special” ingredient you’ll need. If you can’t find matcha latte mix, try making a strong cup of green tea, and add a bit of sugar and cream/milk to it as a base.
So, I’m taking it you’ve found your matcha latte mix. Start with 2 tablespoons of matcha, and 8 ounces/1 cup of water to mix the matcha into. Stir unit dissolved. Next, you’ll add 6 ounces of pineapple juice – I just used a small can from the grocery store.

Add the pineapple juice to the matcha, and stir. Add some ice cubes to make it super cold. Next you will add coconut milk. Sweetened or unsweetened. It’s really up to you. I added about 1/2 a cup. Stir all together and enjoy this pineapple matcha iced latte recipe!
Pineapple Matcha Iced Latte
Ingredients
- 2 tbsp matcha latte mix
- 1 cup cold water
- 1 can pineapple juice 6 ounces
- ½ cup coconut milk sweetened or unsweetened
- ½ cup ice
Instructions
- Mix matcha latte mix with water thoroughly.
- Add pineapple juice, and mix again.
- Add ice.
- Add coconut milk and stir.
- Enjoy!
