As we head into winter, (at least where I live ;)) everyone is looking for recipes that make us feel cozy and warm inside. Recipes like Thea’s fantastic homemade graham crackers! I really love the beginning of winter, the new snow, and the excitement of changing seasons. Along with winter, comes the desire to bake something! At least for me this happens. Warm cookies and a hot chocolate or cup of tea! Perfection on a chilly, snowy day.
I’m so happy to share this recipe with you all. I’ve been baking these cookies for my girls for at least 15 years. Thea, my good friend, gave me this recipe for graham crackers. Thea likes to give her kids very healthy food, and these crackers, although sweet, use whole wheat flour in the dough. Thea’s fantastic graham crackers are a fun cookie to make with kids! Rolling the dough, and cutting out the shapes are something that my girls enjoy now that they are getting old enough to take over in the kitchen;)
I have a hard time giving them rein in the kitchen these days. They have their preferences, and want to work things out for themselves, rather than have me tell them what to do the whole time they’re there. Ahhh. Motherhood.
One thing I have to warn you about this recipe…it makes A LOT. You may want to cut the recipe in half if you aren’t feeding an army of boys (or girls!). I might add, they do last a long time in the cookie jar without going stale, so it won’t hurt to make the whole batch!
I have a whole collection of neat little cookie cutters, and the girls and I took advantage of them this time. My favourites were the pigs. Often you can find cute cookie cutters at pretty much any grocery or hardware store. Or even on Amazon. I found a pig cookie cutter that is pretty close to the same as mine! Thea’s Fantastic Homemade Graham Cracker Recipe
- 2 cups brown sugar
- ½ cup honey
- 1 cup butter
- ¾ cup milk
- 1 tsp vanilla
- 2 cups all purpose white flour
- 4 cups whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon(optional)
- ⅛ tsp salt
- Mix brown sugar, honey and butter.
- Mix both flours, baking powder, baking soda, optional cinnamon and salt together.
- In a small bowl, stir milk and vanilla together.
- Little by little, mixing alternately, add flour mixture, then milk mixture until everything is incorporated.
- Roll dough out on a floured surface, until it is about ⅛ " thick. Cut out in squares or cookie cutters.
- Bake in a 400 degree fahrenheit oven for about 8 minutes. The cookies should be browned around the edges.
