Cinnamon Baked Oatmeal with Kefir

A deliciously healthy idea for breakfast or any time of the day! Great with yogurt or berries on the side.

  • 3 cups oats, either rolled or quick will work
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chopped, toasted almonds
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 1 1/2 cups plain kefir


  • Preheat the oven to 350 degrees F.
  • Toast your almonds in a cast iron pan until lightly browned. Set them aside until cooled.
  • Melt the coconut oil in a cast iron pan on very low heat.
  • In a large bowl, measure the oats, baking powder, salt and cinnamon. Stir well.
  • Add the honey, coconut oil, kefir and almonds. Stir well again.
  • Pour into a greased 9 by 9 pan and bake for 30 to 35 minutes.
  • Enjoy with yogurt and berries, or just a little milk!
